How does elderberry extract work?
Elderberry's proposed action starts with its chemistry: the fruit carries one of the highest anthocyanin contents of any berry, led by cyanidin-3-O-glucoside, alongside quercetin, other flavonoids, and tannins. In laboratory work those compounds competitively inhibit the binding of influenza virus to host cells, and elderberry preparations raised production of the inflammatory cytokines IL-1 beta, IL-6, IL-8, and TNF-alpha while stimulating a Th2-helper response.
